How to Make Dark Chocolate & Mascarpone Mousse Tiramisu | Pottery Barn

Continuing with the series of making restaurant-like recipes at home, in this video, chef and author Joey Altman shares his favorite dessert recipe—dark chocolate & mascarpone mousse tiramisu. To make this dessert, Joey begins with the mousse recipe, which includes melted dark chocolate and butter mixed with egg yolk and sugar. Joey also adds whipped cream and meringue (a mixture of sugar, egg whites and vanilla cream) to make a perfect chocolate mousse. Joey then soaks some ladyfingers in a syrup made of dark coffee, rum and brandy and layers them at the base of a glass bowl. Once the base layer is complete, he arranges the chocolate mousse on top of it and creates another layer of ladyfingers at the top. To complete the dessert recipe, Joey adds mascarpone triple cheese cream on top and arranges it evenly with the help of a spatula. The dessert is covered and refrigerated before being served with liberal amounts of chocolate and fruit garnishes. Recipe: Guinness and Irish Cream Chocolate Cake Chefs: Vanessa Moses and Flavia De Bortoli Serves: 6 (served in 3"x2" ceramic ramekins) Ingredients: 2 cups Guinness 2 cup butter (room temp) 3 cup sugar 4 eggs 11/2 cup sour cream 1 ½ cup cocoa powder 4 cup four 1 tsp baking powder 1 tsp salt Method: 1. Cream butter and sugar together with mixer (hand-held or stand) 2. Add eggs one at a time 3. Add Guinness and sour cream 4. In a separate bowl add all dry ingredients 5. Combine the wet and dry together 6.
